The actual destiny of the four mushrooms in question...

Far RHS - sliced thick, fried in garlicky butter, in an omlette

Bottom LHC - boiled in wine vinegar with a few mates, stuck in a jar of olive oil until Christmas then served up with cold meat

The other two - sliced thin, stuck in an airing cupboard to dry, then into a pasta sauce at some point over the next 12 months

Can I have your 'boiled in wine vinegar' recipe please, the quantitites? I've preserved lots of stuff in olive oil, perhaps the vinegar's the secret to it all keeping longer.

Pasta sauce yes, but d'you do risotto?
